  1. Hi, I can't wait to try your marshmallow recipe. Your meringue recipe also looks really exciting but is there anything that could be substituted for the pina colada mix. I don't think it's available where I live.

  2. The meringue recipe was a fluke more than anything. It works because of the added ingredients in the pina colada mix that act like thickeners and help the fluff whip up quite well. I hope to replicate it with other ingredients soon. I'll keep you updated...

  5. I'm so pleased to find a decent marshmallow recipe!! I'd love to try it but need a stand mixer... was just wondering, have you ever come across Peeps? Do you know anywhere that does vegetarian peeps? I want to make Peepshi! see here:

  6. Fun! OK, a couple things here. I have come across Peeps and if I'm not mistaken, I think Sweet & Sara's sells vegan "peep" marshmallows. That might be an easy way to make Peepshi. You can also do them yourself with my recipe if you want. I would get a "Peep" shaped cookie cutter. That might be the best way. You can coat it with colored sugar and use melted chocolate on a toothpick for the eyes and mouth.

  7. I'm interested in ordering your ebook, though I have a question. Are your recipes soy-free? Also, do they call for corn syrup?

  8. Good questions. The recipes in the book use soy protein isolate as an ingredient, but pea protein isolate is also available and, as I have been told, can be used as a substitute. It is vegetable-based protein in the same concentration as the soy. As for corn syrup, I have two corn-syrup free recipes on my blog that you can check out for free!

    Just scroll to the top of this page and check out the list of recipes on the right. Click on No Corn Syrup Marshmallows or Vegan Agave Nectar Marshmallows. Both are corn-syrup free.
